Cream Puffs

Combine in sauce pan
½ c butter
1 c. boiling water
Add all at once
1 c. flour
¼ tsp salt

Beat vigorously until mixture leaves the sides of the pan. Remove from heat and cool slightly.
Then add one at a time

4 unbeaten eggs
Beat until smooth after adding each egg. Beat until glossy
Drop batter from a spoon onto greased sheet mounding each and swirling top.
Space 2” apart.
Bake for 30 to 40 min at 375 until light and dry.
Allow to cool slowly away from drafts.
