Thimble Cookies

Cream together
½ c. butter
¼ c. sugar
Add 1 well beaten egg yolk
2tsp lemon juice
Beat well
Add 1c. flour
Combine ‘til well blended.
Shape into 1” balls
Dip balls into 1 slightly beaten egg white then roll into 1c. finely chopped nuts.
Place on greased cookie sheet and make a fairly deep indentation in centre of each cookie.
Bake at 350 for 5min. then indent again.
Bake for another 10-12 min.
Cool and add bright jelly.
